Turkey Chops with Cranberry Salsa

Boneless Breast


3 lbs fresh cranberries, washed, drained, & coarsely chopped

3/4 c fresh cilantro, minced

12 oz green onion, minced

6 jalapenos, seeded and minced

10 oz whole berry cranberry sauce

6 tbsp orange zest

2 tbsp sugar

Salt to taste

25 8 oz each turkey breast cuts

1-1/2 Pints Italian dressing, prepared

7 oz butter substitute for broiling



For salsa: Combine cranberries, cilantro, green onion, jalapenos, cranberry sauce, orange zest, sugar, and salt. Prepare several hours ahead to allow flavors to blend.

Marinate turkey bone-in chops in Italian dressing for 30 minutes in refrigerator.

To order: Apply butter substitute to broiler. Broil turkey bone-in chop for 7 minutes per side, brushing lightly with butter substitute after turning.

Plate and serve with 2 ounces of cranberry salsa on the side or in a ramekin.
