3 lbs plain yogurt
1-1/2 c vegetable oil
2 tbsp chili powder
2 tbsp cumin powder
1-1/2 tbsp ginger paste
1-1/2 tbsp garlic paste
Salt and white pepper To Taste
25 8 oz each boneless turkey breast
1/4 c fresh cilantro, chopped
7 cucumbers, medium, peeled, seeded, and chopped
7 tomatoes, medium, seeded and chopped
7 jalapenos, seeded and minced
1/4 c olive oil
1/4 c fresh lemon juice
Salt To Taste
PREPARATION
In a mixing bowl, combine the following marinade ingredients: yogurt, vegetable oil, chili powder, cumin, ginger and garlic pastes, salt and pepper.
Place turkey chops in a large pan, pour marinade over turkey, making sure marinade is applied on both sides. Cover and marinate at least 3 hours in cooler.
SALSA
Mix cilantro, cucumbers, tomatoes and jalapenos with olive oil and lemon juice. Season to taste with salt.
PER ORDER
Grill or broil turkey bone-in chop for 6-7 minutes per side or until chops reach an internal temperature of 165 degrees F.
Plate turkey and garnish as needed. Serve 2 ounces of salsa on side or in ramekin.
