2 tsp vegetable oil
1 lb GROUND TURKEY
1 c chopped onion
1 c tequila lime salsa
4 (8-inch) whole wheat flour tortillas
1 c fresh cilantro leaves, chopped
In large nonstick skillet, heat vegetable oil over medium heat.
Add turkey and onion, breaking up turkey with a wooden spoon. Sprinkle with 1/4 teaspoon pepper. Sauté until turkey is no longer pink and onions are soft. Drain all liquid from pan. Stir in salsa. Remove from heat and stir in cilantro.
Meanwhile, heat tortillas according to package directions.
Portion turkey mixture down center of each tortilla. Fold bottom edges of each tortilla up and over 1-inch of filling. Fold one of the long sides over flap and filling and roll up tightly.
Serve immediately.
