1/2 c orange juice
2 tbsp canola oil
1 tbsp spicy brown mustard
1/4 tsp salt
1/8 tsp ground red pepper
8 oz field greens salad blend, chilled
2 tbsp chopped fresh cilantro
1 orange, peeled, sectioned, halved
1 avocado, peeled and sliced
1/4 Small red onion cut into thin wedges
1-1/2 c COOKED TURKEY, cut into cubes
1/4 c pumpkin seeds (pepitas)
Beat orange juice, oil, mustard, salt and red pepper in small bowl until well blended. Cover and set aside.
Place lettuce in serving bowl or on large serving platter. Top with cilantro, orange, avocado, red onion and turkey breast strips. Drizzle with salad dressing. Top with pumpkin seeds.
