20 (4 oz each) TURKEY STEAKS, thawed (5 lbs total)
80 Leaves bibb lettuce, washed and dried
10 c tomatoes, diced into 3/8-inch pieces
5 c red bell pepper, diced into 3/8-inch pieces
5 c yellow bell pepper, diced into 3/8-inch pieces
6-2/3 c cucumber, peeled, seed, and diced into 3/8-inch pieces
2-1/2 c hard cooked eggs, diced into 1/4-inch pieces
2-1/2 c sweet onion, diced into 3/8-inch pieces
5 c avocado, diced into 3/8-inch pieces
1-1/4 c black olives, pitted, drained, and sliced
Broil thawed turkey steaks 3 to 3-1/2 minutes each side, 3 to 4 inches from flame, to an internal temperature of 160 degrees Fahrenheit. Chill and dice into 3/8-inch pieces.
Arrange 4 bibb lettuce leaves on each chilled serving plate.
Place 4 ounces of turkey in line down the center of the plate.
Arrange 1/2 cup of tomatoes, 1/4 cup of red pepper, 1/4 cup of yellow pepper, 1/3 cup of cucumber, 2 tablespoons of eggs, 2 tablespoons of onions, and 1/4 cup of avocado in lines parallel to the turkey. Garnish with 1 tablespoon of black olives and serve with choice of dressings.
