50 (3-oz) TURKEY BREAST CUTLETS
1-1/2 Pints vinaigrette
13 oz Prosicutto ham, thinly sliced
25 oz Emmental-style cheese, sliced
13 large eggs
18 oz buttermilk
3 tbsp fresh thyme, minced
3 tbsp fresh oregano, minced
3 lbs cornflakes, crushed
Lightly flatten turkey breasts in plastic wrap. Marinate in vinaigrette for 30 minutes in refrigerator. Drain.
Place 1/2 ounce of Proscuitto and 1 ounce of cheese on top of half of the cutlets. Place second cutlet over cheese and hold together with spaghetti sticks. Cover and refrigerate.
Prepare eggwash by mixing eggs and buttermilk. Mix well.
Mix crushed cornflakes with minced herbs.
Dip turkey in eggwash and roll in cornflake mixture. Cover and refrigerate until needed.
To Order: Bake in convection oven at 350 degrees F for 17 to 18 minutes or until cooked through.
Garnish as needed.
