20 4 oz each TURKEY STEAKS, thawed (5 lbs total)

2 c lemon juice, freshly squeezed

2-1/2 c extra virgin olive oil

2-1/2 tbsp cumin, ground

5 tsp garlic powder

5 tsp black pepper, freshly ground

1 tbsp salt

1/2 tsp mace, ground

7-1/2 qt prepared "quick cooking" couscous, follow manufacturer's instructions; chilled

5 c tomato, diced into 3/8-inch pieces

5 c garbanzo beans, canned and drained

2-1/2 c golden raisins

5 c red bell pepper, 1/4-inch by 1-1/2-inch slices

1-1/4 c slivered almonds, toasted

1-1/4 c fresh parsley, chopped

20 Each green onions, sliced thin

40 Leaves red leaf lettuce, washed and dried

40 Each lemon wedges

As Needed parsley sprigs


Grill thawed turkey steaks 3 to 3-1/2 minutes per side on a 340 degree Fahrenheit grill to an internal temperature of 160 degrees. Chill steaks and dice into 1/2-inch pieces.

Blend lemon juice, olive oil, cumin, garlic powder, black pepper, salt and mace.

Blend diced turkey, dressing and all other ingredients except lettuce together. Cover and refrigerate at least one hour or up to 1 day.

Arrange 2 lettuce leaves on chilled serving plate. Place 3 cups of turkey/couscous mixture on top and garnish with 2 lemon wedges and parsley sprigs.
