1/2 c reduced-calorie mayonnaise
1/3 c skim milk
3 tbsp onion, finely chopped
3 tbsp fresh lemon juice
1-1/2 tsp curry powder
1 tsp sugar
1 lb DELI TURKEY BREAST, cut into 1/2-inch cubes
3 c cooked long-grain rice
1/2 Jar spiced red apples, chopped
1/2 c slivered almonds, toasted
6-12 Lettuce leaves, washed and drained
In small bowl combine mayonnaise, milk, onion, lemon juice, curry powder and sugar.
In large bowl combine turkey, rice, apples and almonds. Fold in mayonnaise mixture, cover and refrigerate until ready to serve.
To serve, arrange lettuce leaves on 6 salad plates and top each with a heaping cup of salad.
