3 tbsp tomato paste
1/2 c fresh basil, chopped
3/4 tsp granulated garlic
1-1/4 tsp salt
1-1/4 lbs unsalted butter, softened
40 Slices (7-1/2 lbs) SPLIT TURKEY BREAST, sliced 3/8-inch thick
Blend tomato paste, basil, garlic, and salt into butter. Transfer butter to a sheet of waxed or parchment paper and roll up, forming a 1-1/2-inch diameter log. Twist ends closed and refrigerate until firm. Keep refrigerated until ready to serve.
Heat turkey breast by steaming all portions in a covered pan appoximately 15 minutes. Or turkey breast slices may be grilled to a golden brown color, approximately 2 minutes per side.
When ready to serve, cut 2 one-half-ounce slices of butter and place each atop hot turkey breast slices. Serve immediately, while butter is still melting.
Portion: 6 ounces turkey with 1 ounce butter per portion.
