Turkey Etouffee

Cooked Turkey


3 oz butter

3 oz onions, large dice

3 oz red pepper, large dice

3 oz green pepper, large dice

2 tbsp garlic, minced

3 oz tomato, coarsely chopped

2 c tomato puree

1 lb CAJUN SPICED TURKEY BREAST, cut into 1-inch cubes

1-2 Dashes Tabasco Sauce

2 tsp Worcestershire Sauce

2 tbsp fresh parsley, chopped

1/4 c green onions, thinly sliced

8 oz white rice, cooked


Heat butter in a large skillet, add onions and peppers and saute.

Add garlic and tomatoes; cook for 5 minutes.

Add tomato puree, turkey, Tabasco and Worcestershire Sauces. Reduce heat and slowly simmer for 30 minutes.

Stir in fresh parsley and green onions.

Serve over white rice.
