1-1/2 lbs leafy lettuce, washed, dried and chilled
4 Medium tomatoes, cut in wedges
8 Stalks scallions, chopped
1-1/2 lbs ROASTED TURKEY BREAST, cut in 1/4-inch slices
8 Jumbo portabella mushroom caps, grilled and sliced thick
24 Stalks asparagus, grilled
1/2 c Parmesan cheese, freshly grated
As needed commercial roasted garlic salad dressing
Toss lettuce with tomatoes and scallions. Fill 8 salad bowls with 4+ ounces lettuce mix and top each salad with 1-1/2 ounces of sliced turkey breast and 2-3 grilled mushroom slices.
Repeat the layering with an additional 1-1/2 ounces of turkey and 3-4 mushroom slices across the top of each salad.
Finish by fanning 3 asparagus over the top of each salad.
Sprinkle with Parmesan cheese and serve with roasted garlic dressing.
