Lime-Chili Dressing
1-1/4 c fresh lime juice
1/3 c cider vinegar
4 tsp sugar
1-1/2 tsp chili powder
1/2 tsp ground cumin
Salt and pepper, to taste
1-1/4 c vegetable oil
3 medium garlic cloves, minced
2/3 c green onion, sliced
2 large Green Anaheim Chili, roasted, peeled, seeded, & chopped
Remaining Ingredients:
3-3/4 lbs mixed salad greens
80 cherry tomatoes, qtered
1 lb, 14 oz cheddar cheese, shredded
20 tortilla salad shells, fried and cooled
5 lbs smoked turkey breast cut into 1/4-inch by 1/4-inch by 2-inch strips
5 lbs guacamole, prepared
1-1/4 c sour cream
5/8 c green onions, sliced thin
1-1/4 c black olives, pitted, drained and sliced
For Lime-Chili Dressing: Blend lime juice, vinegar, sugar, chili powder, cumin, salt and pepper thoroughly. Whisk in vegetable oil and stir in garlic, green onion, and green chiles. Use within 8 hours of mixing. Stir before each use.
Toss salad greens, tomatoes, and cheese with Lime-Chili Dressing.
Arrange about 4-1/2 ounces of greens/cheese mixture in each tortilla shell.
Top with 4 ounces of smoked turkey strips, 4 ounces of guacamole, and 1/2 ounce of sour cream. Sprinkle with green onions and black olives.
