Turkey Italian Roll-Ups




Black pepper, freshly ground As Needed

1/2 lb proscuitto ham, thinly sliced

1/2 lb Provolone cheese, thinly sliced

1 c fresh basil, chopped



Cut turkey breast in half. Cut each of those halves into thirds. Cut each of those six pieces in half, for a total of 12 pieces.

Place each piece of turkey between plastic wrap and flatten with a meat mallet to about 1/4" thickness.

Rub the flatten turkey with freshly ground pepper.

Place prosciutto slices atop turkey. Continue layering with Provolone slices and chopped basil.

Roll lengthwise and tie with butcher's string so the rolls will stay tight.

Roast at 350 degrees F. for 45-60 minutes.

Remove from the oven, cool for 20 minutes, cover and chill.

Slice into small medallions. Serve on lightly toasted crostini.
