2 tsp canola oil
1 Medium green bell pepper, seeded and chopped
1 c chopped onion
1 Clove fresh garlic, minced
2 tsp peeled and minced fresh gingerroot
1/2 tsp dried thyme leaves
1/8 tsp cayenne pepper
1/8 tsp ground allspice
1/4 tsp freshly ground black pepper
1 (28-oz) can diced tomatoes
3 c diced COOKED TURKEY
2 c cooked sweet potato, peeled and 1/2-inch dice
1/2 c TURKEY BROTH
1 tbsp freshly squeezed lime juice
Heat oil in a Dutch oven over medium heat. Add pepper and onions and sauté about 5 minutes or until vegetables are soft. Add garlic and cook until fragrant, about 30-45 seconds.
Add gingerroot, thyme, cayenne, allspice and pepper. Gently cook to allow flavors to blend, about 20-30 seconds.
Stir in tomatoes, turkey, potato and broth. Reduce heat to low and gently simmer 15-20 minutes.
Stir in lime juice. Reduce heat to warm. Cover and let flavors blend for 10-15 minutes.
