Turkey Kielbasa and Black-Eyed Pea Salad



2 c TURKEY KIELBASA or SMOKED TURKEY SAUSAGE, cut into 1/4-inch slices

1 Can (16 oz) black-eyed peas, rinsed and drained

1 c tomatoes, diced

1/2 c celery, cut into 1/4-inch slices

1/4 c green pepper, seeded and chopped

1/4 c red bell pepper, seeded and chopped

1/4 c green onions, thinly sliced

1/4 c parsley, chopped

2 tbsp olive oil

2 tbsp freshly squeezed lemon juice

1 Clove garlic, minced

2 tsp grainy mustard

1 tsp sugar

1/4 tsp salt

1/8 tsp pepper


In medium-size bowl combine kielbasa, black-eyed peas, tomatoes, celery, green and red bell peppers, green onion and parsley.

In small bowl whisk together oil, lemon juice, garlic, mustard, sugar, salt and pepper. Fold into turkey kielbasa mixture to coat ingredients.

Cover and refrigerate at least 2 hours to allow flavors to blend.
