Turkey Loaf with Spanish Sauce

Ingredients

1 tbsp vegetable oil

1 Medium onion, chopped

2 Cloves garlic, minced

2 lbs GROUND TURKEY

1 egg, beaten

1/2 c milk

1/2 c dry breadcrumbs

1 tsp salt

1/4 tsp pepper

2 tsp olive oil

1 Medium onion, chopped

1 tsp garlic, minced

1/2 c sweet green bell pepper, seeded and diced

3 tbsp tomato paste

1 16-oz Can diced tomatoes, undrained

1 bay leaf

Salt and black pepper To taste

2 tbsp parsley, finely chopped

Directions


Turkey Loaf



Over medium heat, in a large skillet, heat 1 tablespoon vegetable oil and saute onion, stirring occasionally until soft. Stir in garlic and cook 30 seconds longer. Cool slightly.


In large bowl, combine turkey, cooked onion and garlic, egg, milk, breadcrumbs, salt and pepper. Mix well.


Lightly pack mixture into greased 8-1/2 inch by 4-1/2 inch loaf pan. Bake at 350 degrees F for 1 to 1-1/4 hours until the internal temperature reaches 165 degrees F.




Spanish Sauce



Over medium heat, in a large skillet, heat olive oil and saute 1 medium onion, 1 teaspoon garlic and 1/2 cup green pepper. Cook, stirring occasionally for 7 minutes.


Stir in tomato paste, tomatoes (including juice), bay leaf, salt and pepper. Reduce heat and simmer for 30 minutes or until sauce thickens.


Remove bay leaf, stir in parsley.




Serve



Slice warm turkey loaf and top each slice with Spanish Sauce.
