Turkey Noodle Casserole



4 oz margarine, divided

4 oz onions, 1/4-inch diced

4 oz celery, 1/4-inch diced

3-1/2 qt cooked noodles, rinsed and drained

1 Package Trio chicken gravy, prepared with 1 gallon boiling water

2-1/2 lbs TURKEY, 3/8-inch, diced

1/4 c red sweet peppers, drained and diced

4 oz fine, dry bread crumbs



Heat 2 ounces margarine and sauté onions and celery until just tender. Hold for third step.

Cook noodles in unsalted boiling water until tender. Rinse and drain. Hold for next step.

Prepare gravy mix. Combine with sautéed vegetables and cooked noodles.

Add cooked turkey and peppers. Blend well.

Portion into two 2-1/2 inch half pans.

Melt remaining 2 ounces margarine. Combine with bread crumbs. Sprinkle each pan with ½-cup crumb mixture. Bake in a preheated 350 degree oven until the casseroles reach 160 degrees F service temperature.

To assemble a single serving, portion 8-ounce portions onto hot service plate.
