Turkey Pasta Salad with Chile Lime Vinaigrette

Ingredients

6 c uncooked rotini

12-oz canned chopped green chilies, drained

1/2 c freshly squeezed lime juice

1/3 c extra virgin olive oil

1 tbsp sugar

1/2 tsp salt

2 lbs COOKED TURKEY, cubed

1-1/2 c julienne-cut jicama strips

3/4 lb Cheddar cheese, cubed

1 qt grape tomatoes, qtered

1/2 c fresh cilantro, chopped

Cilantro sprigs for garnish As needed

Directions


 



1. Cook pasta according to package directions. Rinse with cold water and drain.


2. Stir the chiles, lime juice, oil, sugar and salt together in a large bowl.


3. Add cooked pasta and toss well, thoroughly coating the pasta.


4. Add turkey, jicama, cheese, tomatoes and chopped cilantro. Toss well.


5. Cover and refrigerate at least 2 hours. Garnish with additional cilantro sprigs.
