Turkey Pastrami Sandwich on Irish Soda Bread



1 Loaf (8-inch) Irish soda bread

1 Bottle (8 oz) Thousand Island dressing

4 c prepared deli coleslaw, divided

12 oz TURKEY PASTRAMI, thinly sliced


Cut Irish soda bread in half lengthwise. On each half of bread, spread 1/3 cup dressing. Layer bottom of loaf with 1/3 of cole slaw and 1/2 of the pastrami. Repeat layering with 1/3 cole slaw, 1/3 cup dressing, remaining pastrami and remaining 1/3 cole slaw. Cover with top half of loaf. Wrap sandwich tightly in plastic wrap. Refrigerate overnight.

To serve, cut sandwich into 4 wedges.
