6 lbs GROUND TURKEY
3 c onions, medium dice
1-1/2 c green peppers, seeded and medium dice
12 Cloves garlic, minced
2 tbsp sugar
1 tbsp ground cinnamon
1 tbsp cumin
1-1/2 tsp ground cloves
2-3/4 qt stewed tomatoes
6 Medium Granny Smith apples, cored, medium dice
1-1/2 c golden raisins
3/4 c pimiento stuffed olives, drained well & thinly sliced
Cooked rice As needed
1-1/2 c slivered almonds, toasted
In large skillet, over medium-high heat, sauté ground turkey, onion, green pepper and garlic until turkey is no longer pink. Cook until a light caramelization of turkey and vegetables takes place.
Stir in sugar, cinnamon, cumin, cloves, tomatoes, apples, raisins and olives.
Bring to a boil. Immediately reduce heat, cover and simmer 15 to 20 minutes.
Serve over rice and top with toasted almonds.
May also be served as the filling for flour tortillas or as a stuffing for chili rellenos.
