Turkey Pizza with Basil



9 lbs canned, whole tomatoes

3/4 c fresh basil

6 tbsp fresh parsley

3/4 c olive oil

1/3 c garlic, minced

Black pepper, freshly ground To Taste

3 oz olive oil


25 (Individual 6-inch) prebaked pizza crusts

2 tbsp olive oil

3-1/4 lbs Mozzarella cheese, shredded

3-1/4 lbs Roma tomatoes, sliced

13 oz Parmesan, shredded

1-1/2 c chopped fresh basil




Squeeze the seeds from canned tomatoes into a small sieve, discard seeds and save all juices. Dice the tomatoes small.

Chop basil and parsley.

Heat olive oil in a large sauce pan and add garlic. Cook over moderate heat for 30-45 seconds, but do not brown. Add the strained juice from the tomatoes.

Add the diced tomatoes and simmer over moderate heat until the sauce starts to thicken.

Add pepper and remove from the heat.

Add chopped basil and parsley.


In a braising pan, sauté turkey breast strips in 3 ounces heated olive oil for 4-5 minutes or until half done.

Lightly brush prebaked crusts with remaining 2 tablespoons olive oil. Spoon on 1 ounce Marinara sauce and spread evenly over each crust.

Sprinkle 1 ounce Mozzarella cheese evenly onto each crust.

Arrange 2 ounces turkey breasts strips and 2 ounces tomato slices atop each crust. Sprinkle with remaining 1 ounce of Mozzarella cheese.

Bake in preheated convection oven at 400 degrees F until cheese is melted (about 4-5 minutes).

Remove from oven and top with shredded Parmesan and chopped basil.

Note: Use 1/25 of all ingredients to prepare 1 portion.
