Turkey Portabello Loaves

Ingredients

6 Large eggs, beaten

1 Pint half and half cream

1/4 c fresh rosemary, chopped

2 tbsp dry mustard

2 c onion, minced and sauteed

2 tbsp garlic, minced

3 tbsp kosher salt

1 tbsp hot pepper sauce

3 c portabello stems, diced and sauteed

2-1/2 c panko bread crumbs

10 lbs GROUND TURKEY

2-1/2 qt snow peas, cooked

20 Slices Italian bread, grilled

5 qt mashed potatoes

2-1/2 qt mushroom gravy

40 Large onion rings, cooked crisp

Flat leaf parsley As needed

TURKEY PREP



In a large mixing bowl, combine eggs, cream, herbs, onion, garlic, salt, hot pepper sauce, portabello and bread crumbs. Combine well.


Add ground turkey, mixing gently but thoroughly.


Divide into 2 well greased loaf pans. Wrap with foil.


Bake in a water bath in a preheated 325 degree F oven until the internal temperature reaches 165 degrees F.




SERVICE



Cut turkey loaves into 4 ounce slices.


In the center of each dinner plate, arrange snow peas in a ring/circle.


Place 1 piece of grilled bread atop snow peas. Top with 1 slice of turkey loaf, layer with 1-cup mashed potatoes and second slice of turkey loaf.


Ladle 4-ounces of mushroom gravy over turkey loaf slices.


Top with 2 crispy onion rings and garnish with fresh parsley sprigs.
