2-1/4 lbs potatoes, 1/2-inch dice
3 tbsp canola oil
2-1/4 lbs GROUND LEAN TURKEY
2 Large carrots, peeled and shredded
1 c sliced green onions
24 oz tomato sauce
2 c shredded Cheddar cheese
1 tbsp dried Italian herb seasoning
12 (9 to 10-inch) whole wheat or high-fiber tortillas
As needed light sour cream
Cook potatoes until done. Reserve.
Heat oil in large nonstick skillet over medium-high heat. Crumble ground turkey into skillet and cook, stirring occasionally, until no longer pink.
Stir in carrots and cook 2 minutes. Add potatoes and onions and cook another 2 minutes.
Reduce heat to medium, stir in tomato sauce, cheese and herbs. Cook, stirring occasionally, 4 to 5 minutes until mixture is hot and most of the sauce is absorbed.
On a clean work surface, lay out tortillas. Place 3/4 cup hot turkey mixture on each tortilla. Fold and roll up as for burritos.
Cut in half and serve with sour cream.
