7 Each tomatoes, medium
1/2 c fresh cilantro
5 lbs TURKEY BREAST STRIPS
3 oz butter substitute
25 Each 10-inch flour tortillas
1/4 c olive oil
13 oz sliced black olives, drained
2-1/2 lbs Monterey Jack cheese, grated
1 Bunch fresh cilantro, rough chop
25 oz prepared salsa, medium
Chop tomatoes and cilantro.
Saute turkey strips in butter substitute until barely done.
Place tortillas on baking sheet, lightly brush both sides with olive oil. Bake at 400 degrees F for 2-4 minutes to crisp slightly. Remove from oven.
Sprinkle 3 ounces turkey, 1/4 cup tomato mixture, 1 tablespoon olives, and 1-1/2 ounces cheese evenly over tortillas. Bake at 400 degrees F for 4-6 minutes or until cheese melts.
Remove from oven and sprinkle with additional chopped cilantro.
Slice each tortilla into eighths and serve with 1 ounce salsa.
