Turkey Salpicon



6 tbsp unsalted butter

6 tbsp chopped shallots

2 c button mushrooms, cleaned and sliced

7 c FULLY COOKED TURKEY, skin removed and diced

4 c TURKEY HAM, skin removed and diced

2 tsp fresh chopped tarragon

Freshly ground black pepper To Taste

1 c dry white vermouth

2 c frozen peas, thawed

1 qt (approximately) TURKEY STOCK

Puff pastry shells or crepes As needed



Melt butter in large skillet and stir in shallots and mushrooms. Sauté until softened.

Stir in turkey and turkey ham. Season with tarragon and pepper.

Increase the heat and cook for about 2 minutes.

Pour in the vermouth. Boil down rapidly until liquid has almost evaporated.

Fold in peas. Stir in just enough stock to coat all the ingredients. Heat thoroughly.

Serve hot in pastry shells or ingredients may be folded into crepes.
