3 lbs HOT ITALIAN TURKEY SAUSAGE, casings removed
1/4 c olive oil
3 c sweet onion, chopped
4 lbs red and yellow bell peppers, seeded and chopped
1/4 c fresh garlic, minced
1-1/2 c whole milk
1 tbsp fresh thyme
1/4 c Dijon mustard
1 tsp cayenne pepper
4 Dozen large eggs
1-1/2 c cold water

Sauté sausage in heavy large skillet over medium-high heat until brown, breaking sausage into small pieces. Remove sausage from skillet and, if necessary, drain sausage.
Heat ¼ cup olive oil and add onions, peppers and garlic; sauté until soft. Return sausage to pan.
In a large bowl, whisk together milk, thyme, mustard and cayenne. Stir milk/herbs into sausage mixture, cooking for 3 to 5 minutes until mixture thickens. Hold warm for service.
Whisk together eggs and water, season with salt and pepper. Cover and hold for service in refrigerator.
For each order, spray 8-inch skillet with non-stick spray and portion ½ cup egg mixture into skillet. Swirl mixture and cook until firm throughout with no visible liquid egg remaining.
Portion 1 cup sausage filling on 1/3 of omelet. Fold one side of omelet over filling and roll onto heated plate.
Garnish each omelet with fresh thyme.
