1/4 c olive oil
1/2 tsp dried rosemary
1/2 tsp salt
1/2 tsp freshly ground pepper
2 lbs red potatoes, scrubbed and qtered
1 lb ITALIAN TURKEY SAUSAGE
2 Each zucchini, halved crosswise and qtered lengthwise
Preheat oven to 425 degrees F.
Combine oil, rosemary, salt and pepper in a large bowl. Toss potatoes, turkey sausage and zucchini in oil mixture; let stand 10 to 15 minutes.
Remove potatoes from oil mixture and place in large baking pan. Roast in oven, shaking pan twice for about 25 minutes.
Add sausage and zucchini to pan and bake 10 to 15 minutes longer or until turkey is cooked through. Serve hot.
