1 lb TURKEY BREAKFAST SAUSAGE, casing removed
1 Small onion
2 Large potatoes, peeled
1/2 c cholesterol-free egg substitute
1/4 tsp pepper
Vegetable cooking spray
As needed applesauce or apple pie filling, warmed
In large nonstick skillet, over medium-high heat, sauté turkey sausage 6 to 10 minutes or until turkey is no longer pink. Drain and reserve sausage.
In food processor bowl, fitted with metal blade, process onions 5 to 6 pulses or until onions are chopped. Remove metal blade, fit processor with grating disc and grate potatoes.
In medium bowl combine turkey sausage, onions, potatoes, egg substitute and pepper. Shape 1/2 cup sausage mixture into 5-inch round pancake. Repeat with remaining mixture.
Over medium heat, in large nonstick skillet, lighty coated with vegetable cooking spray, sauté pancakes 2 to 3 minutes per side or until pancakes are brown and potatoes are done.
Serve with apple sauce or apple pie filling, if desired.
