Pan spray, as needed
40 1-oz turkey breakfast sausage links or patties
4 c onions, diced
2 c turkey or chicken stock
4 tsp fresh garlic, minced
6 lbs red-skinned potatoes, steamed, cut into 1-inch pieces
2 c red bell pepper, chopped
2 tsp salt
2 tsp dried sage
1 tsp black pepper, freshly ground
1/4 c parsley, chopped
Spray the bottom of a large saute pan to coat. Cook turkey breakfast sausage about 4 minutes per side, until fully cooked. Remove from pan and keep warm until service.
Saute onions. Add stock to pan to deglaze and reduce liquid by half.
Add garlic, potatoes, and red pepper and cook, stirring gently, 3 to 4 minutes, until potatoes are heated. Add salt, pepper, and sage and stir well. Taste and adjust seasonings. Stir in parsley.
Serve immediately on warm plates with 2 sausage pieces alongside.
