Turkey Sausage with Spicy Blueberry Relish




2 Cloves garlic, minced

1/2 c onions, minced

1/4 c parsley, chopped

1 tsp salt

1 tsp black pepper

1/2 tsp dried thyme

1/2 tsp ground ginger

1/2 tsp freshly grated nutmeg

1/2 tsp dried red pepper flakes

2 tbsp vegetable oil

1-1/2 c sugar

1 tsp lemon juice

1 Large orange, juiced

1 Each lime, juiced

1 tbsp fresh ginger, peeled and grated

1 Stick cinnamon

1 tsp crushed red pepper flakes

1 c raisins

1 c Engllish walnuts, toasted

2 lbs fresh blueberries, cleaned

2 tbsp balsamic vinegar


Turkey Sausage

Gently combine turkey, garlic, onions, parsley, seasonings, herbs and spices; do not overmix. Cover and refrigerate for 1 hour. Shape the turkey mixture into 2-inch patties.

Heat oil in a large skillet. Over medium heat, brown patties on each side.

Reduce heat to low and cook through until the internal temperature reaches 165 degrees F, about 5-7 minutes. Serve with Spicy Blueberry Relish.

Spicy Blueberry Relish

Place sugar in wide, heavy skillet with straight sides over high heat. Add lemon juice. Stir until sugar turns light amber and is smooth.

Stir in orange and lime juices and spices. Cook for 5 minutes. Fold in raisins, walnuts and blueberries, stirring to coat.

Cook over medium heat until half the berries pop.

Remove from heat and add balsamic vinegar. Serve at room temperature.
