Ingredients

20 oz fresh spinach, washed, drained, stems removed & chilled

3 lbs SMOKED TURKEY BREAST, skinned and cut into thin strips

20 oz fresh orange segments, seeds removed and chilled

2 c red onion, very thinly sliced

1 c salted dry roasted peanuts

1 c golden raisins

1/2 c extra virgin olive oil

2 tbsp white wine vinegar

2 tbsp mango chutney

1-1/2 tsp curry powder

1-1/2 tsp dry mustard

1 tsp salt

Directions

Salad Assembly

Tear spinach leaves into bite-sized pieces.

In large bowl, combine spinach, turkey, orange and onion slices, peanuts and raisins. Cover and chill for service.

Vingrette

Combine olive oil, vinegar, chutney, curry powder, mustard and salt. Cover and hold at room temperature.

Per order, pour dressing over salad, tossing to coat.
