Turkey Steak Club Sandwich

Culinary Setting
Boneless Breast, Turkey Bacon


40 4-oz TURKEY STEAKS, thawed

60 Slices white bread, toasted

As Needed mayonnaise

40 Leaves leaf lettuce, washed and drained

80 Slices TURKEY BACON, sliced, cooked

80 Slices tomato


Pound steaks out to approximately the size of the slice of bread to be used. Broil steaks 1-1/2 to 2 minutes on each side until fully cooked. Chill.

For each sandwich: Place a piece of toasted bread on work surface. Spread top side with mayonnaise. Add 1 leaf of lettuce, folded to fit bread.

Add 1 turkey steak, 2 slices of bacon and 2 slices of tomato. Spread mayonnaise on both sides of second piece of bread and add to sandwich.

Stack remaining ingredients as in first layer and top with final piece of bread, (spread bottom side of bread with mayonnaise). Place toothpicks in each 4 corners of sandwich and cut diagonally into quarters to serve.
