2 lbs tomatoes, peeled, seeded, and chopped
6 oz sweet onions, chopped
5 Large garlic cloves, minced
1/4 c olive oil
1/4 c red wine vinegar
1-1/2 tsp dried basil leaves
1-1/2 tsp dried oregano leaves
To Taste salt and black pepper
12 eggs
1-1/2 c milk
40 Steaks (6-1/4 lbs) TURKEY STEAKS, thawed
1 lb Italian bread crumbs
As Needed vegetable oil
Chop tomatoes, onion, and garlic together in a food processor to a chunky consistency. Combine with remaining sauce ingredients and refrigerate for at least 1 hour to allow flavors to blend.
Blend eggs and milk thoroughly. Dip thawed turkey steaks in egg mixture, then into bread crumbs, pressing to help crumbs adhere.
Heat about 1/8 inch of vegetable oil in a large skillet and saute breaded turkey steaks about 2 minutes per side, to an internal temperature of 165 degrees F. Cook in batches, if necessary, changing oil if necessary.
For each portion, serve 5 ounces turkey steak with 2 ounces of Siciliano sauce.
