3 oz olive oil
6 oz TURKEY BREAST, julienned
3 oz TURKEY BACON
4 oz wild mushrooms, cleaned and sliced
1 green bell pepper, seeded and julienned
1 red bell pepper, seeded and julienned
1 sweet onion, sliced thin
3 oz TURKEY STOCK
1/4 tsp freshly grated nutmeg
3 oz sour cream
1/3 c brandy
2 oz goat cheese
2 oz Swiss cheese, grated
2 oz Cheddar cheese, grated
2 oz egg linguine, freshly cooked and drained
2 oz spinach linguine, freshly cooked and drained
2 tbsp fresh parsley, minced
In hot oil, saute turkey breast with bacon, mushrooms and vegetables.
Add turkey stock, nutmeg, sour cream and brandy. Gently reduce to sauce consistency. Cook 10-15 more minutes to thicken.
Stir in goat cheese.
Mix Swiss and Cheddar cheeses together. Mix egg and spinach linguine together.
Per order: In individual ramekins, portion linguine and top with sauteed turkey. Sprinkle turkey with cheese mixture. Bake in a hot oven 2-3 minutes.
Garnish with sauteed vegetables and sprinkle with parsley.
