1 lb GROUND TURKEY
1/2 c instant rice
1/2 c carrots, grated
1/4 c onion, chopped
3 tbsp parsley, chopped
1 to 2 Cloves garlic, minced
1 tsp dried oregano leaves
1/2 tsp each salt and pepper
1 Can (8 oz) tomato sauce
2 Large green peppers
In a medium bowl combine turkey, rice, carrot, onion, parsley, garlic, oregano, salt, pepper and tomato sauce. Mix to blend thoroughly.
Cut each pepper in half lengthwise. Remove and discard seeds and membranes.
Divide turkey mixture between peppers. Place in a baking dish and cover.
Bake in a preheated 350 degree F oven for about 1 hour, or until the internal temperature reaches 165 degrees F and the peppers are tender.
