“If you can’t find turkey tenders in your store, you can make your own by picking up a turkey breast! You will be cutting against the grain. So look for the white veining in the meat. Whatever direction the white “stripes” are going you cut opposite. Cut in about 1 to 1 ½ inch strips. 2 ½ lbs turkey tenders or 2-3 lb turkey breast, plain or oven-ready
2 tbsp olive oil
2 tbsp butter melted
Grated zest and juice of one lemon
1 tbsp chopped fresh parsley
2 tsp minced garlic
½ tsp salt
½ tsp pepper
1 c Italian seasoned bread crumbs
1 tsp paprika
½ tsp garlic powder
1 c fresh grated parmesan cheese
Cooking oil spray (olive oil is best)
In a large bowl whisk together the egg, olive oil, melted butter, lemon juice, lemon zest, parsley, salt, pepper and garlic.
Add the turkey tenders and make sure all the turkey tenders have been coated in the egg mixture. Cover with plastic wrap and refrigerate to marinate for one hour or even better overnight.
Preheat oven to 400°F.
Prepare a large cookie sheet with a cooling rack placed on it. Spray the cooling rack with nonstick spray.
In a pie plate mix together the bread crumbs, paprika, garlic powder, onion powder and parmesan cheese.
Place each turkey tender into the bread crumb mixture and coat well on both sides.
Place the turkey tenders onto the sheet pan on the cooling rack. Lightly spray the turkey tenders with olive oil cooking spray.
Bake turkey tenders for 20 minutes. Using a cooling rack you don’t have to turn them over during cooking.
Place under broiler for 3 minutes to get even more crispy.
