Turkey Waldorf Salad

Ingredients

3 c mayonnaise

1/4 c fresh lemon juice

1 tsp salt

4-3/4 lbs COOKED TURKEY BREAST, boneless & skinless

6 c tart apples, cored & 1/2-inch dice

6 c celery, 1/4-inch dice

2 c walnuts, chopped

24 Romaine lettuce leaves, washed and dried

6 c whole strawberries, washed and dried

Directions


 



Combine salad dressing, lemon juice and salt; mix thoroughly. Cover and refrigerate.


Cut turkey into 1/2-inch cubes. Place in large mixing bowl.


Combine apples, celery and walnuts and mix thoroughly. Add to turkey. Quickly stir lemon salad dresssing into turkey mixture. (Apples will discolor if the lemon salad dressing is not quickly added.) Cover and hold for service.


Each serving: 6 ounces of turkey/apple portion on a chilled lettuce leaf.


Garnish each portion with 1/4 cup whole strawberries.
