4 oz COOKED TURKEY, diced
4 oz red potatoes, diced or shredded
1/2 oz sweet red pepper, chopped
1/2 oz sweet green pepper, chopped
1/2 oz red onion, chopped
1/2 tsp fresh garlic, minced
1/4 tsp dried thyme
1 tbsp butter
1 large egg
Toss turkey, potatoes, peppers, onion, garlic and thyme together in a medium bowl.
Melt butter over medium heat in a 10-inch skillet.
Add turkey and potato mixture and cook about 5 minutes. Carefully, turn hash over and cook another 5 minutes.
Meanwhile, poach egg until done. Trim edges.
Place hash on a warm serving plate and top with poached egg.
