1-3/4 lb TURKEY DRUMSTICKS, skin removed
1/2 tsp paprika
1 Medium onion, sliced
1/2 c orange juice concentrate
1/3 c water
2 tbsp brown sugar
2 tbsp chopped parsley
2 tsp low-sodium soy sauce
1/2 tsp ground ginger
1 orange, optional
Fresh parsley, optional
Place turkey drumsticks in Dutch oven or roasting pan. Sprinkle with paprika and arrange onion slices over turkey.
In a medium bowl, combine juice concentrate, water, brown sugar, parsley, soy sauce and ginger. Pour over turkey and onions.
Cover pan and bake at 400 degrees F for 1 to 1-1/4 hours; basting with pan juices. Turkey is done when a meat thermometer inserted in deepest part of the drumstick reaches 180 degrees F.
Slice turkey from bone and combine with sauce before serving. Garnish with orange twists and parsley. Serve with long grain white rice if desired.
NOTE: Best if served on the same day as preparation.
