1/2 c olive oil
1/4 c balsamic vinegar
To Taste salt and pepper
1 lb sweet onions, thinly sliced
1 lb red bell peppers, qtered lengthwise & seeds and ribs removed
1 lb yellow bell peppers, lengthwise & seeds and ribs removed
1 lb green bell peppers, qtered lengthwise & seeds and ribs removed
1 lb yellow squash, sliced lengthwise
1 lb zucchini, sliced lengthwise
1/2 c Boursin cheese
40 Slices peasant bread
5 lbs ROASTED TURKEY BREAST, sliced thick
In a large bowl, mix oil, vinegar, salt and pepper. Toss vegetables in mixture.
Grill vegetables 5 to 6 inches from heat source until tender.
Lightly spread each bread slice with cheese. Top with turkey slices and grilled vegetables.
