1/2 c chopped sundried tomatoes, packed in oil and well drained
1/4 c mayonnaise
1 tsp grated lemon peel or zest
1/2 tsp ground cumin
1/4 tsp cayenne pepper
1-1/2 c sliced red bell pepper, seeds and ribs removed
1-1/2 c sliced sweet onion
3 tbsp olive oil, DIVIDED
1 lb DELI TURKEY BREAST, cut in 1/2-inch slices
4 Sandwich English muffins, split and lightly toasted
1 c shredded Mozzarella cheese
In a small bowl, combine drained tomatoes, mayonnaise, lemon peel, cumin and cayenne pepper. Cover and refrigerate until ready to use.
In large nonstick skillet, over medium heat, sauté bell pepper and onion in 2 teaspoons olive oil for 5 to 6 minutes or until vegetables are crisp-tender. Remove from skillet and keep warm.
Add remaining oil to skillet and sauté turkey for 3 to 5 minutes or until turkey is lightly browned on both sides.
Spread tomato mixture over bottom half of each muffin and top with 1 turkey slice and ¼ of the pepper/onion mix. Top with Mozzarella cheese and broil 1 to 2 minutes or until cheese is melted.
To serve, top each with other half of muffin.
