Two-Bean Turkey Chili

Ingredients

3 lbs yellow onion, peeled and chopped in medium dice

3 oz butter substitute

1-1/2 c garlic, minced

10 lbs GROUND TURKEY, lean or regular

1 c cumin seeds

1 c oregano, dry leaf

1 c paprika

1/4 c cayenne pepper*

1 c chili powder*

10 lbs tomatoes, canned, peeled

4 lbs tomato paste

3 Gallons TURKEY STOCK

5 lbs black beans, canned, drained and well rinsed

5 lbs pinto beans, canned, drained and well rinsed

Salt and white pepper to taste

Directions


 



Heat butter substitute in large stock pot, add onions, and cook for 3 minutes. Add minced garlic and cook for 1 additional minute.


Add ground turkey to stock pot and cook until just done.


For chili blend: toast cumin seeds, in a heavy skillet, until they begin to brown lightly. Add remaining seasonings and toast 5-10 seconds or until fragrant. Grind in spice mill to make into a powder.


Coarsely chop canned tomatoes, reserving juices. Add chili blend, tomatoes, along with juices, tomato paste and 3 gallons of water or turkey stock. Simmer for 1 to 1-1/2 hours.


Add rinsed beans and simmer 10-15 additional minutes.


Spoon 8 ounces into bowl and garnish.


Suggestions for garnish include sour cream, shredded cheese, avocado, chopped green onions or black olives.


* NOTE: Increase amounts of cayenne and chili powder for a hotter chili.
