1 lb GROUND TURKEY
1 c chopped onion
1/3 c bulgur
1 tbsp chili powder
1/4 tsp salt
1/4 lb coarsely chopped mushrooms
1/2 c shredded carrots
1 Can (15 oz) tomato sauce
6 Whole Wheat sandwich buns (6-inches each), split and toasted
In large non-stick skillet, over medium-high heat, saute turkey and onion 5 to 7 minutes, or until turkey is no longer pink. Drain and return mixture to skillet.
Stir in bulgur, chili powder, and salt. Cook, stirring constantly, 1 to 2 minutes or until mixture is combined.
Add mushrooms, carrots, and tomato sauce; bring to boil. Reduce heat to low, cover and simmer 10 to 15 minutes, or until mixure is heated throughout.
Serve over toasted buns.
