West Coast Oriental Turkey Salad



1 lb COOKED TURKEY BREAST, cut into narrow strips

1 Head iceberg lettuce, shredded

2 c bean sprouts

4 green onions, sliced thin

1/4 c lower-sodium soy sauce

1/4 c rice vinegar

1/4 c sesame oil

2 tbsp honey

2 tbsp hoisin sauce

2 tbsp water

2 tbsp sesame seeds, toasted

2 tsp fresh ginger root, peeled and minced

2 tsp dry mustard

1 c chow mein noodles

12 Thin slices pickled red ginger or carrot



Set aside 1/3 pound of turkey strips. Toss remaining turkey with lettuce, bean sprouts and onions in a large serving bowl.

Arrange reserved turkey on top; cover and chill.

Whisk together soy sauce, vinegar, oil, honey, hoisin sauce, water, ginger root and mustard.

At serving time, pour dressing over salad; sprinkle sesame seeds and noodles on top.

Garnish each portion with red ginger or carrot strips.
