About this Dish

These Korean BBQ Turkey Tenderloin Kebabs bring together tender grilled turkey, a bold dry rub and a sticky Korean BBQ sauce made with gochujang, soy sauce, honey, ginger and toasted sesame oil. Serve with fresh lime wedges, sliced scallions and cilantro.

Ingredients

1 turkey tenderloin

1 tbsp vegetable oil

1 tsp chili powder

1 tsp granulated sugar

½ tsp kosher salt

½ tsp sweet paprika

½ tsp granulated garlic

½ tsp granulated onion

⅛ tsp cayenne pepper

½ cup Korean BBQ sauce

4 fresh lime wedges

2 sliced scallions

8 fresh cilantro sprigs


Korean BBQ Sauce

Yields: About 2 cups

Cook Time: 10–15 minutes

¾ cup ketchup

½ cup rice wine vinegar

½ cup light brown sugar

¼ cup gochujang

¼ cup soy sauce

¼ cup honey

2 tsp granulated garlic

2 tsp granulated onion

1 tsp ground ginger

1 tsp toasted sesame oil

Directions

Cut the turkey tenderloin into 1-inch cubes and place in a zip-top bag with vegetable oil. Massage the bag to evenly coat the turkey with oil.

In a small bowl, mix together the chili powder, granulated sugar, kosher salt, sweet paprika, granulated garlic, granulated onion and cayenne pepper.

Toss the oiled turkey tenderloin cubes with the dry rub and marinate for 1 hour.

Remove the marinated turkey tenderloin cubes from the bag and place them on a plate to remove any excess oil.

Skewer the marinated turkey onto bamboo or metal skewers.

Clean and preheat your grill for zone cooking, setting one side to high heat and the other side to low heat.

Place the skewered marinated turkey tenderloin on the hot side of the grill and grill for about 2 minutes per side, cooking all 4 sides of the cubes for a total of 8–10 minutes, or until the internal temperature reaches 160°F.

Place the cooked turkey tenderloin kebabs onto the low-heat zone of your grill and brush with Korean BBQ sauce.

Let the sauce cook onto the meat for about 1 minute, until tacky. Transfer the Korean BBQ skewers to a platter and serve with additional Korean BBQ sauce for dipping, fresh lime wedges, sliced scallions and fresh cilantro.


Korean BBQ Sauce Directions

Combine all ingredients in a 2-quart sauce pot and bring to a simmer over medium heat, stirring often.

Once the sauce comes to a simmer, reduce the heat to low and continue to cook for an additional 10–15 minutes, or until it reaches the desired consistency.

Cool and transfer to airtight containers. Refrigerate until ready to use.
