3 c fresh tomatoes, seeded and diced
1/3 c sweet red onion, minced
1/3 c fresh cilantro, chopped
2 tbsp fresh lime juice
1 tbsp jalapeno pepper, seeded and minced
To taste salt and pepper
12 4 to 5 oz slices TURKEY SCALOPPINE, lbed to an even thickness
3 tbsp fresh lime juice
2 tbsp chili powder
1 tbsp dried oregano
3/4 tsp salt
1-1/2 tsp ground black pepper
As needed fresh lime wedges
Combine tomatoes, onion, cilantro, 2 tablespoons lime juice, jalapeno, salt and pepper. Cover and reserve for service.
Sprinkle lime juice over turkey scalloppine.
Combine chili powder, oregano, salt and pepper. Dust turkey with seasonings, coating well.
On lightly greased grill or sauté pan, over medium high heat, cook turkey for 3 to 4 minutes per side, until golden brown and cooked through.
Serve with Tomato Salsa and garnish plates with lime wedges.
