1 c sugar
3/4 c cider vinegar
2 tbsp poppy seeds
3 tbsp sweet onions, minced
3-1/4 c mayonnaise
1 tsp ginger, fresh, peeled and grated
To Taste salt and black pepper
2-1/2 lbs fresh spinach, washed & dried thoroughly
3-3/4 lbs fresh strawberries, washed, dried, stemmed & qtered
3-3/4 lbs fresh honeydew, 1/2 inch cubes
2-1/2 lbs fresh pineapple chunks, 1/2 inch cubes
2-1/2 lbs fresh pink grapefruit, sectioned
3-3/4 lbs HONEY CURED TURKEY BREAST, cut into 1/8-" x 1/2" x 4" ribbons
2-1/2 c sliced almonds, toasted
For Ginger-Poppy seed Dressing: Blend sugar, vinegar, poppy seeds and onion together until sugar is dissolved. Whip in mayonnaise, ginger, salt and pepper. Cover and hold refrigerated until ready to use.
For each serving: Arrange 2 ounces of spinach on an entree plate. Place 3 ounces of strawberries, 3 ounces of melon, 2 ounces of pineapple, and 2 ounces of grapefruit around outside of plate. Arrange 3 ounces of turkey "ribbons" in center of the plate.
Just before serving, drizzle 1/4 cup ginger-poppyseed dressing over all (or dressing may be served on the side). Sprinkle 2 tablespoons of toasted almonds over turkey and serve immediately.
