Ginger Scallion Turkey Burgers



4 lbs TURKEY THIGHS, raw, trimmed and coarse ground twice

3 Bunches scallions, chopped fine

1/4 c Dijon mustard

2 tsp fresh gingerroot, peeled and fine mince

3 oz soy sauce

1 oz honey

1 lb firm tofu, small dice

Salt and pepper To taste

Asian Mayonnaise

1/2 c mayonnaise

1 tsp oriental sesame oil

1 tsp soy sauce

2 tsp fresh gingerroot, peeled and fine mince

1 Dozen crusty Kaiser rolls, split and toasted



In a large stainless steel bowl, combine ground turkey, scallions, mustard, 2 teaspoons ginger, soy sauce, honey and tofu by folding ingredients together and slightly breaking up tofu.

Season with salt and pepper.

Form into 12 patties (6.5-ounce patties each).

Prepare Asian mayonnaise by mixing mayonnaise, sesame oil, soy sauce and remaining 2 teaspoons ginger. Cover, chill and hold for service.

Grill turkey burgers over hot heat, turning only once until the internal temperature reaches 165 degrees F in the center of the burger. Serve with Asian mayonnaise on Kaiser rolls.
