Honey-Lime Turkey Salad



3 c plain low-fat or non-fat yogurt

3 c regular or low-fat dairy sour cream

1 c clover honey

2 tbsp lime zest, finely shredded

1/3 c fresh lime juice

Salt and white pepper To Taste

6-1/4 lbs COOKED TURKEY BREAST, cut in strips

7 fresh peaches, peeled and sliced thin

2-1/2 lbs seedless red grapes, halved

1/2 lb celery, sliced thin on the diagonal

3/4 c fresh chives, chopped

3 Heads red leaf lettuce, washed & dried, torn into bite size pieces

7 limes, sliced




In a medium bowl, mix yogurt, sour cream, honey, lime zest, lime juice, salt and pepper to taste. Mix well.


In large bowl, combine turkey, peaches, grapes, celery and chives. Mix well.

Line plates with lettuce. Divide turkey mixture (about 8 ounces) among the plates.

Serve 2 ounces of dressing over turkey mixture.

Garnish with lime slices.

Note: Could use cooked turkey cutlets to replace turkey breast strips.
