3/4 c white balsamic vinegar
1/4 c olive oil
1 tbsp curry powder
1 tsp salt
1/2 tsp cayenne pepper
1/2 c black olives, drained well and chopped
3/4 lb Blue cheese, crumbled
2 tbsp olive oil
1 lb sweet onions, sliced
2 tsp curry powder
1 tsp garlic salt
2 qt TURKEY BROTH
1 qt uncooked converted rice
1-1/2 lbs ROASTED TURKEY BREAST, diced fine
1 lb sweet red bell peppers, seeded and diced fine
1 lb snow peas, cut in half and steamed
1/2 lb celery, diced
3 oz green onions, minced
Red leaf lettuce As needed
Red and green pepper rings As needed
CURRIED DRESSING
Mix together balsamic vinegar, oil, curry powder, salt, cayenne and olives. Stir in Blue cheese last. Cover and hold in cooler for service.
PREPARATION
Heat oil and sauté onions until tender. Stir in curry powder, garlic salt, broth and rice. Mix well. Bring to a boil, reduce heat and simmer about 20 minutes until rice is tender.
Combine rice, turkey, peppers, snowpeas, celery, green onions and Curried Dressing. Mix well, cover and chill.
SERVICE
Serve the mixed salad over lettuce leaf-lined serving plates. Garnish with red and green pepper rings.
